Feel Fab Fast- Fauxmosa



 Champagne makes most things better, but sometimes it is 2pm on a Tuesday and you would be creeping into Support Group status if you sat around throwing back the bubbly all day. In my opinion it is completely acceptable to have a Champagne glass in your hand at all times, just as long as their isn't actual booze in it before the PC drinking hour has chimed.

 Champagne makes most things better but so do Champagne Glasses. There is something about about walking around with this tall skinny gorgeous glass in my hand that makes me feel like there is most likely a hoard of paparazzi waiting outside my door the minute I set out to get cat litter.

 Vitamin C is good but OJ actually isn't super great for you. Lots of calories and carbs. That is why I do half OJ and Half Club Soda. So I have a bubbly Vitamin C packed bev in a glamorous glass and I am feeling F-ing fabulous even if my date asked my friend out while I was in the bathroom.

Easy Italian Cheese Fondue with Sweet Potato Chips and Green Apples



 This isn't my healthiest dish but it is a party go to because PEOPLE LOVE IT. Like I think at my last birthday people were scooping the last of it out of the bowl with their hands.  I am pretty sure that is the sign of a successful appetizer, am I wrong?! 

 It is so easy. I kinda wish it was harder so I would seem like more of a domestic Goddess. But it is basically a bag of cheese and a container of Alfredo sauce. While neither of those items are neceseraly fancy or super healthy they are both
freaking. delicious. Add wine, heat and you've got yourself Fondue my friends, and a crowd of impresses (and fooled) guests.


Italian Fondue Ingredients
1 Jar Bertolli Alfredo Sauce 
2 Bags Italian Cheese Blend
1 cup Dry White Wine (I use Sauvignon Blanc)
Nutmeg (optional)
Ground Cloves (optinal)

In a large saucepan over Medium High Heat add your Alfredo sauce. Here I had the misfortune of using a different brand then Bertolli. It was awful, even though it was like $6 for the jar and from a famous KC Italian place, it was waxy tasting and weird and not nearly as good as Bertolli. So if you can find Bertolli (some smaller stores and like, Target don't seem to carry it) buy it. Totally worth the hunt!
Measure out 1 cup of a Dry White Wine. I use Sauvignon Blanc for cooking and it works really well. 
(And yes that is a Magnum bottle. Totally Good enough Sauv Blanc for $10 is a mega size? Yes please!)
Add one cup of white wine to your Alfredo Sauce while whisking slowly.
Check out my new clean burners and stove cup things! I was cleaning them and found out the other day the burner disconnects, you can pull out the tray thing and clean it! I felt so handy! Bitches be doin' it fo' themselves!  
Add your cheese slowly while whisking, turn up the heat slightly to Medium High.

It will be glopy for a bit, but keep whisking and as the cheese melts it will become a beautiful velvety consistency.
Once it is smooth add your grated Nutmeg and a dash of Ground Cloves. I usually only add these during the Holidays so it is completely up to you if you want to leave them out!

Allow to simmer on low for about 15 minutes and then transfer into a Fondue pot to serve.

LOW CARB BAKED SWEET POTATO CHIPS 
3 Large Sweet Potatoes- Skin On
Olive Oil (About 2 Tablespoons per Potato)
Sea Salt
Large Mixing Bowl
Mandoline Slicer
Cookie Sheet

Pre Heat the Oven to 400.  
Using a Mandoline slicer on the thinnest setting, begin to carefully cut the Potatoes vertically into medallions. 

I say carefully because I have almost lost a finger just about every time I use my Mandoline. 
I can see my friends now "I have this great 9 fingered girlfriend with 2 cats, but she makes really great Sweet Potato Chips!" = Fail.

If you don't have a Mandoline you can slice by hand but if the thickness of your slices varies you will need to pay more attention while baking to be sure they are cooking evenly!




Add the sliced Sweet Potatoes to a large mixing bowl and coat them gently with Olive oil and Sea Salt.


Arrange them evenly on an un-greased cookie sheet and bake for 20 minutes, checking on them frequently.


They are ready when they are Golden brown and look slightly crunchy.  


Add your sliced Green Apples to the plate and serve with your warm Italian Cheese Fondue. This appetizer is always a huge hit and no one missed the Bread at all!

Holiday Spiced Whiskey Cocktail

If it wasn't for booze, the Holidays would be a much less pleasant time of year. Going home feels a little like a wild pack of chihuahuas biting at my ankles non-stop, except we don't own any dogs. So any reason to make a festive cocktail is reason enough for me. Between the spending your life savings on gifts no one really needs, battling with cats just to put a ribbon on my gifts and hanging out with family members who talk to imaginary people when they drink, a proper stiff cocktail is in order.

Back when I had my 30th birthday someone brought a huge jug of Whiskey that barely got touched so I figured the holidays were the perfect time to turn it into a festive delicious holiday cocktail. I bought an amazing apothecary container a couple years ago at Z Gallery and it was such a great buy, it is gorgeous and it is a great way to spruce up inexpensive booze by infusing it various fun flavors! The Apothecary was around $50 bucks but I see them at Target and all over for much cheaper, and it really is something you will get a ton of use out of.  


HOLIDAY SPICED WHISKEY COCKTAIL:
Handle of  Bourbon Whiskey 
6- Cinnamon Sticks 
Jar of Whole Cloves
5 Oranges
1 week of time to infuse (the longer it infuses the more delicious it becomes!)
Club Soda or Champagne as a mixer

Using a Mandoline slicer I took 4 of the Oranges and using the medium thickness setting began to slice them all into slices with the skin and everything all still on. Remove any seeds before adding the slices to your Whiskey. Take 1 orange and cut it into wedges. Stick the whole cloves into the skin of the orange wedges so they will stay in . 
Add the Orange slices to your container filled with Whiskey. Add in 6 cinnamon sticks and 1 tablespoon of cloves. Let this mixture infuse for about a week before serving, the longer you let it infuse the better the results.  You can leave the fruit in as long as there is Whiskey in the container to preserve it.
To serve your cocktail put in a Champagne glass (or something more manly for the guys) and add a curl of Orange peel and a cinnamon stick. I added Club soda to reduce the intensity, but I am a chick and wasn't trying to grow hair on my chest by drinking straight Whiskey. Men however, will love this straight. 
For the Orange Curl I used my Citrus Zester which has a handy tool at the end to create this curly little citrus gems. If you don't have that just carefully use a pairing knife to cut a thin ribbon. Wrap it around your finger to create a bit of a curl. You can also hold a lighter to the skin a minute to let the oil from the Orange drip into the drink for extra flavor. This Whiskey is also fabulous if you add Champagne to make the cocktail instead of Club Soda, none Whiskey fans will find it much more delightful that way. 
Anything bad + Champagne= Much better.
